Yes, This Was My Breakfast
Day 267 (23rd May)
Hands down one of the best breakfasts I've had! I made hot chocolate and coffee cake which paired so well with the stormy weather.
Here's the recipe:
For the coffee cake (One serving):
Ingredients:
Two tablespoons of coffee
Three to four tablespoons (taste test!) of powdered sugar
Half a cup of milk
Two tablespoons of olive oil
One teaspoon of baking powder
Half a cup of flour
Directions:
Whisk the coffee and the milk together.
Whisk the oil and the sugar together till just combined.
Add the coffee (with milk) to the oil and sugar.
Sift in the sugar, flour, and baking powder.
Stir everything with a spoon and add it to a greased microwave-safe dish.
Microwave for two minutes, or the cake starts pulling from the sides of the container.
Optional: Serve with a dollop of whipped cream.
For the hot chocolate (One serving):
Ingredients:
Half a cup of milk
One tablespoon of cornstarch
Five cubes (about fifty grams) of chopped dark chocolate
One tablespoon of powdered sugar
One tablespoon of cocoa powder
Directions:
Whisk all ingredients except the chocolate in a pan.
Simmer it over medium heat.
Gradually add the chocolate.
Heat till the mixture thickens (about three to four minutes).
Recommended: Serve with a dollop of whipped cream!
