Oop, not the ice cream leaking :D
I made mango sticky rice mochi! I had some leftover sticky rice from a few days ago, so I made this mochi. I saw a video on it, so it's not an original idea, but here is what I did:
Recipe (for one serving)
Ingredients:
One-fourth cup of cooked sticky rice (if your rice is not sweetened, add about half a tablespoon of your sweetener of choice and mix it well)
One tablespoon of cornstarch
One scoop of vanilla ice-cream
A few cut slices of mango
Other fruits (to your liking)
Instructions:
Dust your hands and the countertop with cornstarch.
Flatten the sticky rice in a circular shape.
Feel free to use up to two additional teaspoons of cornstarch to make sure the mochi does not stick.
Add a scoop of vanilla ice cream to the middle of the mochi.
Engulf the ice cream with the mochi.
Place the mochi seam-side down in the freezer for about 15 minutes to set.
Top with freshly sliced mango and other fruits of choice.
Enjoy!
I think this is a brilliant way to use up sticky rice. :D You can fill it with different types of ice cream to make a different version.
