Intermittent (I love Mangoes)

Every couple of months, I remember my faithful friend, www.bakewithsara.com, promising to come back to it. I still take "blog" pictures of everything I make, hoping to one day post them here. Slowly as I get through life, with the busyness of college and a strangely crazy summer, I realise there's no perfect time. And it's not like anyone's shaming me for not posting on time. I can post as much or as little as I want because this is my little corner of the internet. If you don't like it, oh well. It's not like anyone's reading these anyway. Except Daniel, who recently submitted a contact form berating me for not utilising my SEO enough and begging me to hire him. I'm half convinced he's a bot, but if you're reading this, Daniel, and slightly offended because you're a real human, please reach out again because I'd love your help 😁


Summer baking was going to be my one saviour this summer, but I haven't been in the kitchen as much as I'd like. Although, I suppose even if I spent all my days cooking up my ideas, it wouldn't be enough. It's been harder making "unhealthy" treats at home, because I've been trying to be more conscious of how I eat (a linear correlation to the four straight quarters of food and healthy eating classes I've taken), and my parents and my brother are not much interested in every day gluttony. Can't blame them. I've been giving away my goodies to people around me, but they can also eat only as much, and at some point, it feels like a waste to make so much with nowhere to go. I will find a solution for this, though.


Anyway, this summer was the summer of mango! Nothing compared to the last summer I spent in Bombay eating hoards of Alphonsos, but I do hold a special place for a juicy Dasheri mango. As long as it's not American "mango", I'm good with any variety. I've been adding mango to my matcha, eating it plain, and I even made mango ice cream. My mom really likes it when I make the whole condensed milk-whipped cream ice cream so I thought I'd give it a try. I asked her what flavours she'd like, and she said just mango, so I added my favourite RAW Pressery mango juice and canned mango juice I found in the fridge to about equal amounts of condensed milk and whipped cream and let it set in the fridge overnight. I briefly thought about adding actual fresh mango to the ice cream batter, but fruit in ice cream never tastes as fresh and turns icy in the freezer. So, while serving, I topped it with fresh mango, and everything was okay <3

Now that summer's basically over, I haven't seen a mango in a while, but these mango memories make me quite happy. One of my friends has an insane mango cream recipe that I really want to recreate if I find a good set of mangoes before I leave, so I will post about that when I do.
