I Finally Made Lemon Bars!

Okay, fair warning, I made these lemon bars two weeks ago — I've not had a single moment to upload my recent bakes. But do expect a storm of pending posts soon!


I love everything lemon, so I've been wanting to try this recipe from Sally's Baking Addiction for over a year. Sally never falls short of expectations, so it's always a delight to test out her recipes.


The texture of these lemon bars is flawless! They're smooth and the perfect balance between wet and dry. I blended the lemon filling for a better texture — I believe that helped get rid of the "egg lumps" (if that makes sense?).


However, the taste of the bars was a bit too tart. I used store-bought lemon juice instead of freshly-squeezed lemon juice. The store-bought lemon juice is generally more concentrated. I think if I had used a substitution ratio of 1:2 instead, it would've worked well. Definitely a note for next time!
