Day 49 (17/10): Coffee Gelato (Dalgona Pudding Fail?)

Hi, everyone!


It has been a week since I last updated the blog, and I owe an explanation for my sudden disappearance. Honest confession time: I have been having a tough time keeping up with life, in general. And while I have still been baking, I have been finding it hard to write the posts. Though I don't love the large gap between the posts, I have had a restful week, and I am more than excited to be back! I'm sure guys will find these few posts quite interesting, as well. I had the BEST happy accident, made savoury food, and tried lots of dessert recipes! So, buckle in, and scroll through the newly updated series of posts.

 

For day 48, I wanted to make a pudding – I was still craving the lemon mousse that I made a few days ago and wanted to make something similar. I chanced upon this recipe for a vanilla dalgona pudding. It looks so good!


I never hopped onto the dalgona trend, so I was excited to try it for the first time.


The pudding came together well, and it looked JUST like the picture on the website. I had made the pudding early in the morning – so it was left in the refrigerator for quite some time. I didn't even touch it till the next day.


That night, I had a dream that the pudding turned brown, and lo and behold, when I got up in the morning and rushed to check the pudding, it was indeed brown! (What was up with that strangely psychic dream?)


Not only was the pudding brown, but it was also a wet mess. In hopes of salvaging at least some of it, I decided to freeze it to get ice cream. That worked like a charm! It turned into this delicious coffee gelato (not sure if it technically qualifies as gelato, but it did taste like it). It was even better than the coffee ice cream I made about a month ago. Honestly, if you're looking to make gelato at home, this would be my go-to recipe.
