Day 41 (09/10): Eggless Vanilla Cupcakes

Hi! :)

On day 40, I made eggless vanilla cupcakes using this recipe. I've been trying to follow more eggless recipes to expand my baking repertoire. But also, I am a bit repulsed by eggs at the moment. I bought a large pack of 30 eggs, and one towards the end of the carton cracked what seems like days ago. The egg had all sorts of insects and larvae in it. Welp, I guess when you notice a strong egg smell, you better go and check it. (In hindsight, yes, I was very foolish.)

Moving on to my review of the recipe: I liked it! They're basic vanilla cupcakes, and I probably wouldn't be able to tell the difference between this one and ones with eggs.

Plus, they taste so good with buttercream on top! I combined some red and white buttercream that had been lying in the fridge for a while and added some sprinkles on top. This is how they turned out:

I made six, but the tray could only fit four :o
