Day 34 (02/10): Caramel Cupcakes

I AM OBSESSED WITH THESE CUPCAKES. If you are a fan of caramel, you need to make these ASAP! They have a caramel filling, a caramel buttercream, AND a caramel drizzle - whaaat 😯

These cupcakes taste like a small bite of heaven, and they are so simple to make. To check out the recipe, keep scrolling!

Components

  1. Vanilla Cupcakes: For the cupcakes, I used this vanilla cupcake recipe from Sally's Baking Addiction. You can use any recipe you like, though! A chocolate base would also work well.

  2. Caramel: For the caramel, I followed this video on the cupcakejemma channel. I made the wet caramel since it is perfect for drizzling and filling cupcakes. If you don't want to go through the trouble of making caramel, you could use Hershey's caramel syrup. Though I would recommend making caramel at home – it's satisfactory in its own way!

  3. Caramel Buttercream: Once you've made the caramel, the hard part is over! All you need to do is add a bit of the caramel to your buttercream. Here's a video to follow.

Assembly

  1. Once you are done with baking, arrange all the cupcakes in a line.

  2. Use an inverted piping tip to scoop out the middle of the cupcake, saving the top for later.

  3. Fill the inside with caramel.

  4. Place the top crust back onto the cupcake.

  5. Frost with the caramel buttercream, and enjoy!
